The lard from the molise region is derived from the fat of the pig, appears to be of soft consistency and free of impurities. This extracted fat hot undergoes first a process of melting and then filtering. By the process of filtration is the separation of fragments of the fleshy, the so-called greaves, from the liquid fat. The lard is much used in the mixtures, because it adds crispness to the sweet and softness to pizzas, bread, biscuits and bagels.
