The lard from the molise region is derived from the fat of the pig, appears to be of soft consistency and free of impurities. This extracted fat hot undergoes first a process of melting and then filtering. By the process of filtration is the separation of fragments of the fleshy, the so-called greaves, from the liquid fat. The lard is much used in the mixtures, because it adds crispness to the sweet and softness to pizzas, bread, biscuits and bagels. 350 grams approx.
